Meat and dairy are getting WAY too expensive lately. So, my interest in your classes has peaked. (yeah.. yeah...I know that is not a noble reason to learn to cook vegan) But it's the honest truth. Plus, I think all the fiber will be good for my kids and their bowel issues! ;)

I would like to sign up for the October class... I just bought tofu for the first time and have no idea what to make with it. Any suggestions for something that my family will eat for the first trial?
